What is Gunpowder Tea?

Gunpowder tea (also known as Zhu Cha in Chinese, or atay in Moroccan Arabic) is a type of green tea where each leaf is rolled into a small, tight pellet. This rolling process:

  • Preserves the tea’s freshness and aroma for longer
  • Creates a more concentrated, bolder flavour than flat-leaf green tea
  • Produces a slightly smoky, robust character unique to this style
  • Makes it the essential ingredient in Moroccan mint tea

How to Brew Ahmad Gunpowder Tea

Use 1 teaspoon (2–3g) per cup. Pour water at 80–85°C (not fully boiling). Steep for 2–3 minutes for a lighter cup, or up to 4 minutes for a bolder brew. The pellets will slowly unfurl – watch the transformation in a glass teapot for a stunning visual experience.

How to Make Moroccan Mint Tea with Gunpowder Tea

Moroccan mint tea is one of the world’s great tea rituals – and gunpowder tea is its essential base:

  1. Rinse the teapot with a small amount of boiling water, then discard
  2. Add 1–2 tsp gunpowder tea + a generous handful of fresh mint leaves
  3. Pour hot water (85°C) and steep 3–4 minutes
  4. Add sugar to taste (traditionally very sweet)
  5. Pour from a height to create a frothy top – the signature Moroccan style
